Eating with Control – 10 Tips

Food – it's everywhere! We use it to celebrate, mourn, and appease boredom.    Some of us are mindless eaters, not realizing how much actually consume.  Others choose to overindulge because it feels good (at the time).  Most of us are probably a combination of the two.  Sadly, a lot of us eat to fill a void (one that can only be truly satisfied with God). Of course, there are the rare few that have no problem with food whatsoever – more power to them! Obesity is a huge problem in the modern world.  It is true that much of the...

My daughter is growing up!

My oldest daughter, known here as SugarBean, is growing up!  She will be nine next month.  I can hardly believe it! In the past few months I have seen so many things click with her.  The two that stand out the most: she has taken off with reading and is gaining confidence to try new things.  She has always been extremely apprehensive, so this is saying a lot! She even “teaches” her own Bible class. SuganBean is my intense child.  Intense describes her very well.  She really “feels”  and “thinks” 🙂 Although she still has a number of obstacles to...

Shaker Cake – A Kid’s Tutorial

Shaker Cake – A Kid’s Tutorial |
This post is the first in a a series of kid's cooking tutorials brought to you by my daughter, known as SugarBean (with help from Mom). Today we will be making a Shaker cake.  It is called a Shaker cake because you put all of the ingredients into a jar and shake them up! This recipe is adapted from the Shaker cake recipe in Home Economics for Homeschoolers, Level One, by Pearables. It is fairly easy.  Just be sure you have a good grip on the jar. I wouldn't recommend shaking it over a tile floor!  If it happens to...

What this blog is not

Sometimes I read blogs and think that other people have everything figured out.  I know they don't (no one really does), but it can cause me to wonder why I am not quite as “with it” as these other mothers. I don't want any reader here to ever feel looked down on.  It is my intention to encourage and motivate. I am working toward a peaceful home too.  I don't have it all figured out.  If you could meet me in real life you would know that 🙂 Delighting in the Days is not the writings of a deliriously cheerful...

Healthy Body = Happier Home

I’ve been procrastinating this post, so I’m setting a timer for 30 minutes and getting on with it! We each have a body (“duh!” you say).  Our bodies need a few basic things in order to function well: good food, exercise, and rest. Fresh air and effectively dealing with stress are also important factors. It is easy to feel out of control with our health when life is just plain busy.  But it is important to remember that no one can make us healthy.  It is our job. We put the food in our mouth, we choose to exercise or...

Snacks and more Snacks!

Snacks and more Snacks! |
This last week in the kitchen has been all about snacks! I purchased the Healthy Snacks to Go e-book (by Katie Kimball from and decided to cook my way through it.  I usually do that with new cookbooks. I am not very disciplined when it comes to taking my time, so we have had an abundance of snacks all week long.  No one is complaining! I often feel a little nervous when purchasing e-books since it is not possible to flip through the pages (while sipping on tea at borders) beforehand. Occasionally I am disappointed, but thankfully this was...

Change – It’s not for the weak

I came across the following quote recently: “You are the way you are because that’s the way you want to be. If you really wanted to be different, you would be in the process of changing right now.” – Fred Smith When I heard it, all I could think was, “OUCH!”  There are many things I’ve wanted to change about myself or about the way my family functions, but I have not.  Excuses come easy to a tired mind. It got me thinking, do I want to come to the end of my life and have only achieved that which...

An Eternal Focus

Heaven. Is it real to you?                                         For the faithful Christian, heaven is a reality.  God promised it and He keeps His word. Life may get tough.  We may feel worn to the ground, as though the world has chewed us up and spit us out.  But this is not all there is. In order to have a healthy mind and spirit, we need to take hold of this truth.  So much peace comes from knowing you are right with God and knowing what awaits you at the end of this life (as much as our earthly mind can comprehend, that...

Favorite Salad Nuts

Favorite Salad Nuts |
I thought it might be nice to take a little break from the serious talk and share a yummy recipe that makes me very happy… These nuts are delicious sprinkled on a salad or eaten alone.
